Christmas Recipe Swap

We just had our last support group of 2025 (crazy!) which was our annual support group holiday party, and we were talking about seasonal treats. Since I have yet to find a way we can have an in person potluck, I thought a recipe swap would be the next best thing.

Drop the recipe for your favourite holiday treat so we can all get in on the goodness.

My family is Norwegian (with some of them still living in Norway!) so one of the recipes we've taken to making every holiday season is Lefse. I have fond memories of making them with my Grandma, and eating them with butter and sugar. I haven't quite mastered the art of making them myself, but that doesn't stop me from trying (and eating my attempts!)

Lefse:

  • 5 large potatoes
  • 1/2 cup heavy cream
  • 1/2 cup flour
  • 1 tsp salt
  • 3 tbs butter

Boil potatoes. Mash very fine. Add cream butter + salt. Beat until light + let cool. Add flour. Take a piece of dough, roll thin and shape into discs. Bake on top of stove or pancake griddle until light brown

    My mom would make something similar. "Tortas de papa" We never tried them with butter or sugar though. 😍 She would add cheese to the mix of potato and I am assuming all the fixings you mentioned. I haven't mastered making them, but add some protein, and they're a good side dish. I'll post our tamal recipe for you adventurous folks. 🤣

    Hello all, thank you again for all the great input into our recovery and mental thoughts. Here is one I have learned how to make and if you like, you can call them potato pancakes, but very delicious.

    Potato Latkes

    It is a holiday, Hanukkah season, so perfect time for some potato latkes. I washed and shredded about 5 large organic russet potatoes, with the skin on it (usually I used to peel the potatoes, but decided to try this way and see how it comes out. it gave it a bit of that extra starchy taste, which is great, different and interesting) and also washed peeled, and shredded 2 large yellow onions. I put it all into a drainer and squeezed the liquid out of it, especially the onion. Then I put all of that into the mixing bowl and added shredded carrots to it. Then I put spices that I like, able to have and wanted in my latkes, crushed black pepper, paprika, garlic granules, ginger powder, turmeric and sumac. Added about 1 small cup of rice flour and mixed all very well together.

    Then I put my HexClad 14" Hybrid Pan on the stove for about 3 minutes, then added a bit of light sesame oil and after oil heat up a bit, started to make my latkes, by taking a bit of mix, forming it into a sort of a round shape cutlet and then put it on the pan and with the spatula pressed it down a bit to make it flatter. Then gave it a few minutes on one side, flipped the latkes over and let it sit on the other side for a few minutes. I like my crispy, so I checked to make sure that they are well done, before taking them off. 

    Put them on the plate, with some apple sauce and sour cream, and absolutely enjoyed. The family was very happy enjoying them for lunch as well. Bon Appetite Everyone
